The Stewarding Manager is responsible for managing the overall stewarding operations of the hotel, ensuring the highest standards of cleanliness, hygiene, sanitation, and operational efficiency in kitchens, restaurants, banquet areas, and back-of-house facilities. The role ensures proper maintenance of kitchen equipment, effective waste management, and compliance with food safety and hygiene standards.
Key Responsibilities
- Manage and supervise daily stewarding operations across all hotel outlets.
- Ensure cleanliness and sanitation of kitchens, restaurants, banquet areas, and service areas.
- Lead, train, and motivate the stewarding team to maintain high service standards.
- Prepare duty rosters, schedules, and manpower allocation for smooth operations.
- Ensure proper cleaning, handling, and maintenance of kitchen equipment, utensils, and operating supplies.
- Monitor dishwashing operations and ensure availability of clean crockery, cutlery, glassware, and kitchen equipment.
- Maintain hygiene standards as per HACCP, hotel policies, and local regulations.
- Conduct regular inspections of back-of-house areas and implement corrective actions.
- Manage garbage disposal, waste segregation, and recycling procedures.
- Coordinate with Kitchen, F&B Service, Housekeeping, and Engineering departments.
- Monitor inventory of cleaning chemicals, operating equipment, and stewarding supplies.
- Control costs through efficient usage of supplies and reduction of wastage.
- Ensure proper pest control coordination and sanitation practices.
- Conduct training programs on hygiene, safety, and equipment handling.
- Maintain records of cleaning schedules, maintenance reports, and hygiene audits.
- Support banquet operations and special events with required stewarding arrangements.
- Diploma or Bachelor's degree in Hotel Management, Hospitality Management, or a related field.
- Minimum 5–8 years of experience in hotel stewarding operations.
- Previous experience as Stewarding Manager, Assistant Stewarding Manager, or Senior Steward in a 5-star hotel is preferred.
- Strong knowledge of kitchen sanitation, hygiene practices, and back-of-house operations.
- Experience managing large stewarding teams and high-volume operations.
